For our very first recipe on A Pinch of Sea Salt, I thought this chili dish would be perfect. Here is a meal that is easy to make – less than 45 minutes from start to finish! – low in fat, and incredibly nutritious, not to mention tasty! And the serving options are endless! The recipe has been in my family for a while and has been adjusted time and again to yield the perfect result. Here we have made it our own. Let us know what you think!
Chili Con Carne
Yield: 5 servings
12 oz of lean ground beef
1 cup of diced white onion
1 cup of chopped celery
1 green pepper, diced
1 red pepper, diced
1/2 tbs of crushed garlic, or 1 – 2 cloves, minced
1 15 oz can of red kidney beans, rinsed
1 15 oz can of black beans, rinsed
1 15 oz can of diced tomatoes
1 15 oz can of tomato sauce
1/4 cup of water
1 tsp of chili powder, plus more to taste
3 – 4 fresh basil leaves
Salt and pepper to taste
In a large saucepan over medium heat, sautee the onion, celery, both peppers and garlic. Give these ingredients a few minutes over the heat in order to extract their flavors well. Next add the beef and continue to cook until the meat has browned, stirring constantly.
Now mix in both types of beans, the tomatoes and tomato sauce. Add the water, chili powder, basil leaves, salt and pepper and stir until combined.
Bring the mixture to a boil and then reduce the heat to low. Cover the pot and allow the chili to simmer gently for 30 minutes, or until all the vegetables are tender. Stir occasionally. If the chili seems too thick, add more water or tomato sauce until desired consistency is achieved. If too thin, continue simmering until more liquid has been boiled off.
Finish with parsley and a drizzle of olive oil and enjoy! Or try it topped with shredded cheddar or mozzarella cheese and a slice of your favourite bread.
Or even enjoy it over a baked potato, as we did here….endless possibilities!
Note: To cook the potato, simply scrub it, make a few punctures in the skin with a fork, and microwave on high for 5 minutes. Turn the potato over and cook for another 5 minutes, or until the center is tender. Cut open the top of the potato and add butter, salt and pepper to taste. Enjoy with chili or your favorite toppings!
