Why fresh is always best

I have something of a love affair with this tomato salad. Who could resist such perfect, fresh ingredients? Slice up a couple of crisp tomatoes, layer with your favorite local cheese (in my case queso, a salty cows milk cheese with a texture similar to feta), and finish with a drizzle of olive oil, a few fresh basil leaves and a pinch of sea salt. And voila – you have yourself a simple yet exquisite meal.

This is just one easy example of why we love fresh, local ingredients. A colorful plate always looks beautiful and often is the healthiest too. ¡Buen provecho!
