Week Night Meatloaf: An Easy Dinner Recipe

Meatloaf is one of those family style meals that is not only incredibly easy to make, but also can be prepared in advance. Add some steamed veggies or a serving of fresh brown rice and you’ve got a healthful meal that takes hardly any time to put together.

Having just started a new job myself, I like the sound of that! And this recipe adds the element of wonderful flavour to an already work week friendly recipe. Yes, please!

In fact, I like to make this meatloaf over the weekend, divide it into portions, and keep them in the fridge (or even the freezer if you’re thinking even further ahead!). It’s the perfect solution for those nights when you haven’t had time to plan dinner, or just don’t feel like cooking! Enjoy!

Meatloaf 

Yield: 1 loaf, or about 8 portions

Ingredients

2 lbs of lean ground beef

3/4 cup of milk

2 eggs

1 small white onion, diced

3/4 cup of finely crushed crackers (any variety)

1 1/2 tsp of salt

1/4 tsp of ground black pepper

1/2 tsp of ground ginger

1/4 cup of ketchup

1/4 cup of brown sugar

Directions

Preheat the oven to 350 F and lightly grease a large loaf pan.

In a large bowl, mix together all the ingredients, with the exception of the ketchup and brown sugar. I find this is easiest to do using my hands.

Press the mixture evenly into the loaf pan. Spread the ketchup over the top of the meat and then sprinkle the brown sugar over the ketchup.

Bake for 1 hour, or until the meatloaf bubbles at the edges and the juices are clear.
