Here I am, guilty of posting yet another simple salad, but this combination was just too good not to share. The sweetness of the watermelon with the crisp mint flavor and savory feta really is an out of this world pairing. I know this is perhaps more of a summer dish, but we are lucky enough to have watermelon year-round here, so it never goes out of style for us! Staying true to my motto (and my love of simple, delicious salads), the most basic and most colorful plates are always the best. Hope you enjoy this one as much as I did!
Watermelon, Feta & Mint Salad
Yield: 1 appetizer size salad
10 oz of fresh watermelon, cubed
1 1/2 oz of feta cheese
1-2 mint leaves, crushed
A pinch of sea salt
Cube the watermelon and remove the seeds. Arrange on a plate. Cut the feta into small cubes and distribute over the watermelon. Then sprinkle the crushed mint over the salad and finally add a pinch of salt. Garnish with an extra mint leaf and black pepper.
Note: I avoid tossing this salad in order to prevent the watermelon and feta from crumbling.
